Apple Cake  
So, I didn't get as much stuff done as I had hoped. But at least I got my skirt pleated and made my cake. And went to breakfast with my mom.

So I'm giving our apple cake recipe. I don't think I've met anyone who doesn't like it, including some people who don't like fruit in cake.

Apple Cake

This is heavy but not overly sweet or gooey, like a pound cake. We bake it in two-piece a tube pan. We didn't used to have a non-stick pan, so we put cinnamon sugar on the sides instead of flour, but now just use spray. It's a family recipe, a type we call a "1-2-3-4 cake." (You'll see why.

Oven Temp: 320 F (163 C)

1 cup canola oil
2 cups white sugar
3 cups all-purpose flour
4 large eggs
3-4 apples
*1/4 cup apple juice
1 tsp baking powder
Cinnamon Sugar

*This is only the official type of juice, but I use whatever citrusy we have, usually orange juice, and once lemon (it turns out it made you really thirsty when you eat the cake.)

Mix oil, sugar, flour, eggs, juice, and baking powder. You'll want to use a wooden spoon or spatula, since it comes out so thick. Peel and cut apples into sixths (or eighths, whatever.) Spray and flour pan. Pour half the batter in the pan. Roll apples in cinnamon sugar and place half in a circular pattern, then sprinkle with cinnamon sugar. Pour the other half in, and repeat process.

Bake for and 90-135 minutes (until a knife comes out clean, basically.)
